Ingredients
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 8 oz mushrooms, sliced
- 2 medium potatoes, cubed (optional)
- 2 (15 oz) cans white beans, drained and rinsed
- 8 cups vegetable or chicken broth
- 1 lb fresh spinach, chopped
- 1 cup heavy cream
- 1 tbsp fresh thyme
- 2 bay leaves
- Salt and pepper to taste
- ½ cup Parmesan cheese (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the onion, garlic, carrots, and celery for about 5-7 minutes until soft.
- Add the mushrooms and cook until softened.
- If using, add the cubed potatoes, drained beans, broth, thyme, and bay leaves.
- Bring the mixture to a boil, then reduce heat and let simmer for 15 minutes.
- Add the spinach in batches, allowing it to wilt before adding more.
- Stir in the heavy cream and season with salt and pepper to taste.
- If desired, add the Parmesan cheese and stir until melted.
Notes
For added nutrition, include other vegetables like zucchini or bell peppers. To make thicker soup, blend a portion and stir it back in.
