Description

A comforting, creamy, and flavorful plant-based soup made with carrots and potatoes.


Ingredients

  • 4 large carrots, peeled and chopped
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  2. Add the carrots and potatoes, and stir to combine.
  3. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for about 20 minutes, or until the vegetables are tender.
  4. Remove from heat and use an immersion blender to puree the soup until smooth.
  5. Stir in the coconut milk, and season with salt and pepper.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

For a spicier version, add a pinch of red pepper flakes while cooking. Use fresh herbs like thyme or rosemary for an aromatic touch.
