A delicious and healthy Thai Coconut Red Lentil Soup that is packed with protein and creamy flavor, ready in just about 30 minutes.
Ingredients
- 1 cup red lentils
- 1 can coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot, heat a little oil over medium heat. Add onion, garlic, and ginger, and sauté until softened.
- Stir in red curry paste and cook for another minute.
- Add red lentils, vegetable broth, and coconut milk. Bring to a boil.
- Reduce heat and let simmer until lentils are tender, about 20 minutes.
- Season with soy sauce, salt, and pepper.
- Serve hot, garnished with fresh cilantro and lime wedges.
Notes
Rinse lentils before cooking. Adjust red curry paste for spice level and add veggies like spinach or carrots for variation.
