Description

A delicious and healthy Thai Coconut Red Lentil Soup that is packed with protein and creamy flavor, ready in just about 30 minutes.


Ingredients

  • 1 cup red lentils
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. In a large pot, heat a little oil over medium heat. Add onion, garlic, and ginger, and sauté until softened.
  2. Stir in red curry paste and cook for another minute.
  3. Add red lentils, vegetable broth, and coconut milk. Bring to a boil.
  4. Reduce heat and let simmer until lentils are tender, about 20 minutes.
  5. Season with soy sauce, salt, and pepper.
  6. Serve hot, garnished with fresh cilantro and lime wedges.
