Description

A quick and easy pasta dish packed with flavor from fresh spinach and juicy cherry tomatoes.


Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the cherry tomatoes and cook for about 3-4 minutes until they start to soften.
  5. Stir in the spinach and cook until wilted.
  6. Toss the cooked pasta into the skillet, mixing everything together well.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with grated Parmesan cheese if desired.
