A quick and easy pasta dish packed with flavor from fresh spinach and juicy cherry tomatoes.
Ingredients
- 8 oz pasta (spaghetti or penne)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the cherry tomatoes and cook for about 3-4 minutes until they start to soften.
- Stir in the spinach and cook until wilted.
- Toss the cooked pasta into the skillet, mixing everything together well.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
Notes
Use whole grain or gluten-free pasta for a healthier option. Add other vegetables like bell peppers or zucchini for extra nutrition.
