Description

A fun twist on traditional tacos combining baked potatoes with taco ingredients for a hearty meal.


Ingredients

  • 4 large russet potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chopped lettuce
  • 1 tomato, diced
  • 1/2 cup sliced jalapeños
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the russet potatoes, then bake them in the oven for about 45-60 minutes until tender.
  3. While the potatoes are baking, cook the ground beef in a skillet over medium heat until browned. Drain excess fat, then stir in the taco seasoning and follow package instructions.
  4. Once the potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
  5. Top each potato with seasoned ground beef, cheese, sour cream, lettuce, diced tomatoes, and jalapeños.
  6. Season with salt and pepper to taste, and enjoy your loaded taco baked potatoes!

Notes

You can adjust toppings to your preference and use ground turkey or chicken for a lighter option. Consider adding other toppings like olives or corn.
