A comforting and nutritious soup made with carrots and lentils, perfect for any meal.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, diced
- 1 cup lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Stir in the diced carrots and cook for a few minutes.
- Add the lentils, vegetable broth, cumin, and coriander.
- Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until lentils are tender.
- Season with salt and pepper to taste.
- Blend the soup if a smoother texture is desired.
- Serve hot, garnished with fresh parsley and with crusty bread on the side.
Notes
For a creamier texture, add a splash of coconut milk when blending. Top with toasted seeds or croutons for extra crunch.
