Description

A comforting and nutritious soup made with carrots and lentils, perfect for any meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, diced
  • 1 cup lentils, rinsed
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sauté until translucent.
  3. Stir in the diced carrots and cook for a few minutes.
  4. Add the lentils, vegetable broth, cumin, and coriander.
  5. Bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Blend the soup if a smoother texture is desired.
  8. Serve hot, garnished with fresh parsley and with crusty bread on the side.

Notes

For a creamier texture, add a splash of coconut milk when blending. Top with toasted seeds or croutons for extra crunch.
