Description

A comforting and flavorful dish combining tender chicken, colorful vegetables, and aromatic spices with rice, perfect for family dinners.


Ingredients

  • 160 g Basmati Rice
  • 250 g passierte Tomaten (pureed tomatoes)
  • 100 g peas
  • 2 bell peppers
  • 450 ml vegetable broth
  • 350 g chicken breast fillets
  • 2 tsp salt
  • 1 tsp sweet paprika
  • 1/2 tsp cayenne pepper or hot paprika
  • 2 garlic cloves
  • 1 onion


Instructions

  1. Peel and finely chop the onion and garlic.
  2. Cut the bell peppers into small cubes.
  3. Chop the chicken breast fillets into about 1 cm pieces.
  4. Heat olive oil in a large pan or pot.
  5. Sauté the onion cubes in the oil until they turn golden.
  6. Add the bell peppers and chicken, and cook for another 2 minutes.
  7. Stir in the spices and garlic, and sauté for a short time.
  8. Add the rice and peas, then deglaze with the pureed tomatoes and vegetable broth.
  9. Cover and let it simmer for about 14 minutes until the rice is cooked through.
  10. Taste and adjust seasoning if needed, then enjoy.

Notes

To store leftovers, place in an airtight container and refrigerate for 3-4 days, or freeze for up to 2 months.
