A comforting and flavorful dish combining tender chicken, colorful vegetables, and aromatic spices with rice, perfect for family dinners.
Ingredients
- 160 g Basmati Rice
- 250 g passierte Tomaten (pureed tomatoes)
- 100 g peas
- 2 bell peppers
- 450 ml vegetable broth
- 350 g chicken breast fillets
- 2 tsp salt
- 1 tsp sweet paprika
- 1/2 tsp cayenne pepper or hot paprika
- 2 garlic cloves
- 1 onion
Instructions
- Peel and finely chop the onion and garlic.
- Cut the bell peppers into small cubes.
- Chop the chicken breast fillets into about 1 cm pieces.
- Heat olive oil in a large pan or pot.
- Sauté the onion cubes in the oil until they turn golden.
- Add the bell peppers and chicken, and cook for another 2 minutes.
- Stir in the spices and garlic, and sauté for a short time.
- Add the rice and peas, then deglaze with the pureed tomatoes and vegetable broth.
- Cover and let it simmer for about 14 minutes until the rice is cooked through.
- Taste and adjust seasoning if needed, then enjoy.
Notes
To store leftovers, place in an airtight container and refrigerate for 3-4 days, or freeze for up to 2 months.
