Description

Delightful seafood stuffed potatoes combining baked potatoes with rich seafood filling for a satisfying twist.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crawfish, chopped
  • 1 cup shredded Cajun cheese (or a blend of cheddar and pepper jack)
  • 1/2 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Butter for seasoning


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes and prick them with a fork. Bake in the preheated oven for about 45-60 minutes until tender.
  3. Once cooked, allow the potatoes to cool slightly, then cut them in half and scoop out some of the insides into a bowl.
  4. In the bowl, mix the potato flesh with shrimp, crawfish, Cajun cheese, cream cheese, sour cream, green onions, Cajun seasoning, salt, and pepper.
  5. Scoop the mixture back into the potato skins.
  6. Place the stuffed potatoes back onto a baking sheet and dot the tops with butter.
  7. Bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
  8. Serve hot, garnished with more green onions if desired.

Notes

For a special touch, add a sprinkle of extra Cajun seasoning or a squeeze of lemon juice on top.
