Description
Delightful seafood stuffed potatoes combining baked potatoes with rich seafood filling for a satisfying twist.
Ingredients
- 4 large russet potatoes
- 1 cup cooked shrimp, chopped
- 1 cup cooked crawfish, chopped
- 1 cup shredded Cajun cheese (or a blend of cheddar and pepper jack)
- 1/2 cup cream cheese
- 1/4 cup sour cream
- 1/4 cup green onions, chopped
- 1 teaspoon Cajun seasoning
- Salt and pepper to taste
- Butter for seasoning
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the russet potatoes and prick them with a fork. Bake in the preheated oven for about 45-60 minutes until tender.
- Once cooked, allow the potatoes to cool slightly, then cut them in half and scoop out some of the insides into a bowl.
- In the bowl, mix the potato flesh with shrimp, crawfish, Cajun cheese, cream cheese, sour cream, green onions, Cajun seasoning, salt, and pepper.
- Scoop the mixture back into the potato skins.
- Place the stuffed potatoes back onto a baking sheet and dot the tops with butter.
- Bake for an additional 15-20 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with more green onions if desired.
Notes
For a special touch, add a sprinkle of extra Cajun seasoning or a squeeze of lemon juice on top.
