Delicious and easy chicken skewers marinated in ranch dressing and parmesan, perfect for gatherings or weeknight meals.
Ingredients
- 1/2 cup ranch dressing
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried parsley (or fresh parsley, chopped)
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon lemon juice (optional)
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- Wooden or metal skewers
Instructions
- In a bowl, whisk together ranch dressing, parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice (if using).
- Add the chicken cubes to the bowl and toss to coat them well. Cover the bowl and refrigerate for 30 minutes to 2 hours to marinate.
- If using wooden skewers, soak them in water for 15 minutes. Thread the marinated chicken onto the skewers.
- Preheat the grill to medium-high heat. Grill the skewers for 10–15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from heat and let the skewers rest briefly. Garnish with extra parsley or parmesan if desired. Serve with your choice of sides or dipping sauces.
Notes
For more intense flavor, marinate the chicken for a longer time, but do not exceed 24 hours for food safety.
