A tasty and nutritious no-bake snack combining pumpkin, oats, and protein powder for a healthy energy boost.
Ingredients
- 1 cup rolled oats (gluten-free if desired)
- 2 scoops vanilla protein powder
- 1 tsp pumpkin pie spice
- 1/2 cup almond butter
- 1/3 cup pumpkin puree
- 1/4 cup raw honey (sub maple syrup for vegan)
Instructions
- Combine all ingredients in a large bowl.
- Using a small cookie scoop, scoop out approximately 24 small balls.
- Use your hands to roll and place them on a plate.
- Freeze for 10 minutes.
Notes
Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage. Experiment with mix-ins like chocolate chips or nuts for added crunch.
