Description

Enjoy a sweet and healthy snack with these quick and easy no-bake peanut butter bites made from just three ingredients.


Ingredients

  • 1 1/2 cups rolled oats (or quick oats, certified gluten-free)
  • 2/3 cup natural peanut butter (or any nut/seed butter)
  • 3 tablespoons honey (or maple syrup)


Instructions

  1. Add the oats to a food processor or blender and process until they reach a flour consistency.
  2. Add the peanut butter and honey or maple syrup, and process until well combined and forms a dough ball.
  3. Roll mixture into round bites, about a scant tablespoon per bite. If not holding together, add 1-2 tablespoons more peanut butter.
  4. If dough sticks to your hands, oil them with coconut oil or cooking spray.

Notes

Store in an airtight container in the refrigerator for up to a week, or freeze separated with parchment paper for longer storage. Experiment with different nut butters and add-ins like chocolate chips or dried fruit.
