Enjoy a sweet and healthy snack with these quick and easy no-bake peanut butter bites made from just three ingredients.
Ingredients
- 1 1/2 cups rolled oats (or quick oats, certified gluten-free)
- 2/3 cup natural peanut butter (or any nut/seed butter)
- 3 tablespoons honey (or maple syrup)
Instructions
- Add the oats to a food processor or blender and process until they reach a flour consistency.
- Add the peanut butter and honey or maple syrup, and process until well combined and forms a dough ball.
- Roll mixture into round bites, about a scant tablespoon per bite. If not holding together, add 1-2 tablespoons more peanut butter.
- If dough sticks to your hands, oil them with coconut oil or cooking spray.
Notes
Store in an airtight container in the refrigerator for up to a week, or freeze separated with parchment paper for longer storage. Experiment with different nut butters and add-ins like chocolate chips or dried fruit.
