A delightful dish combining fresh corn, succulent shrimp, and a rich, creamy feta cheese sauce, perfect for summer meals or gatherings.
Ingredients
- 2 cups corn kernels (fresh or frozen)
- 1 pound shrimp, peeled and deveined
- 1/2 cup feta cheese, crumbled
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add shrimp and cook until pink and cooked through, about 3-4 minutes. Remove the shrimp and set aside.
- In the same skillet, add corn and cook until heated through and slightly charred.
- In a bowl, mix feta, sour cream, mayonnaise, lime juice, chili powder, salt, and pepper to create the creamy sauce.
- Return the shrimp to the skillet, pour the creamy sauce over the corn and shrimp, and stir to combine.
- Cook for an additional 2-3 minutes until everything is heated through.
- Garnish with chopped cilantro and serve with rice, beans, or corn tortillas.
Notes
For added flavor, consider adding chopped jalapeños or cayenne. Fresh shrimp are recommended, but frozen shrimp work fine if thawed properly.
