Description

A delicious twist on traditional pizza that combines the flavors of tacos and pizza into one cheesy dish, perfect for family dinners or game nights.

Ingredients

  • 1 lb lean ground beef
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can (16 oz) refried beans
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat the oven to 375°F. Lightly spray two baking sheets and arrange three tortillas on each sheet. Bake for 3-5 minutes, flip tortillas and bake for an additional 2-5 minutes until golden and crispy. Set aside.
  2. Cook the ground beef in a skillet over medium-high heat, crumbling it as it cooks. Drain excess grease when browned.
  3. Stir in taco seasoning and water, bring to a boil, then reduce heat and simmer for 10 minutes. Set aside.
  4. Warm refried beans in a microwave-safe bowl for 1-2 minutes. Spread a layer on one tortilla.
  5. Add 1/3 of the ground beef mixture over the beans, place another tortilla on top to create a layered stack.
  6. Spread 3 tablespoons of enchilada sauce on the top tortilla, then sprinkle with cheddar and pepper-jack cheese. Top with diced tomato, green onion, and black olives.
  7. Repeat with remaining tortillas to create stacked pizza layers.
  8. Place assembled pizzas back in the oven and bake for 5 minutes or until cheese is melted. Let cool before slicing.

Notes

For a vegetarian option, substitute ground beef with black beans or grilled vegetables. Customize cheese and toppings to your preference.
