Juicy marinated chicken wrapped in soft pita with vibrant veggies and a refreshing feta tzatziki sauce.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 pita breads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup plain Greek yogurt
- 1/2 cup feta cheese, crumbled
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- Fresh parsley for garnish
Instructions
- Marinate the chicken by mixing olive oil, oregano, garlic powder, salt, and pepper in a bowl. Add the chicken thighs and marinate for at least 30 minutes.
- Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes per side until golden brown and cooked through (165°F/75°C).
- While the chicken cooks, prepare the tzatziki by mixing Greek yogurt, feta, lemon juice, minced garlic, salt, and pepper until smooth.
- Once the chicken is done, slice it into strips.
- To assemble, spread tzatziki on the pita, add chicken strips, and top with cherry tomatoes, cucumber, and red onion. Roll and enjoy!
Notes
For extra flavor, marinate the chicken overnight and consider using a grill for a smoky taste. Leftovers can be stored separately for up to 3 days for chicken and a week for tzatziki.
