Ingredients
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup basmati rice
- 2 cups chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
- In a medium bowl, mix together olive oil, lemon juice, oregano, garlic powder, salt, and pepper.
- Add chicken breasts to the bowl and ensure they are well coated with the marinade. Cover and refrigerate for at least 30 minutes.
- In a saucepan, add the basmati rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and the broth is absorbed.
- While the rice is cooking, heat a grill pan over medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until fully cooked and juices run clear.
- Once the chicken is cooked, let it rest for 5 minutes, then slice it into thin strips.
- In a large serving bowl, layer the cooked rice, grilled chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Top with chopped parsley and serve with lemon wedges on the side for an extra burst of flavor.
Notes
Marinate the chicken longer than 30 minutes for enhanced flavor. This dish can be customized with various vegetables.
