Description

Delicious and satisfying steak quesadillas filled with juicy steak, melted cheese, and sautéed vegetables, all wrapped in a crispy tortilla.


Ingredients

  • 1 pound steak (sirloin or ribeye)
  • 1 teaspoon olive oil
  • 1 cup bell peppers (sliced)
  • 1 small onion (sliced)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • Salt and pepper to taste
  • Optional: sour cream, salsa, or guacamole for serving


Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season steak with salt and pepper. Cook for about 4-5 minutes on each side until desired doneness. Remove from skillet and let rest, then slice thinly.
  2. In the same skillet, add sliced onions and bell peppers. Cook for about 3-4 minutes until tender.
  3. Place a tortilla in the skillet. Layer with sliced steak, sautéed vegetables, and shredded cheese. Fold the tortilla in half.
  4. Cook each side for about 2-3 minutes until golden and cheese is melted. Repeat with remaining tortillas.
  5. Cut each quesadilla into wedges and serve warm with optional sour cream, salsa, or guacamole.

Notes

You can use any type of steak. For added flavor, include other vegetables or spices as desired.
