Description

A comforting soup packed with nutritious ingredients, perfect for cold days or when feeling under the weather.


Ingredients

  • 1 lb tender chicken
  • 4 cups chicken broth
  • 2 cups water
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or basil) for garnish


Instructions

  1. In a large pot, cook the chicken over medium heat until no longer pink. Remove and set aside.
  2. In the same pot, add onion, garlic, carrots, and celery. Sauté until tender.
  3. Pour in chicken broth and water. Add diced tomatoes, thyme, oregano, and season with salt and pepper.
  4. Bring to a boil and then reduce heat. Simmer for 20 minutes.
  5. Shred the cooked chicken and return it to the pot.
  6. Stir in fresh herbs before serving. Enjoy warm.

Notes

For a creamier texture, stir in a splash of heavy cream or coconut milk just before serving. Adjust seasoning according to taste.
