A comforting soup packed with nutritious ingredients, perfect for cold days or when feeling under the weather.
Ingredients
- 1 lb tender chicken
- 4 cups chicken broth
- 2 cups water
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 cup diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh herbs (such as parsley or basil) for garnish
Instructions
- In a large pot, cook the chicken over medium heat until no longer pink. Remove and set aside.
- In the same pot, add onion, garlic, carrots, and celery. Sauté until tender.
- Pour in chicken broth and water. Add diced tomatoes, thyme, oregano, and season with salt and pepper.
- Bring to a boil and then reduce heat. Simmer for 20 minutes.
- Shred the cooked chicken and return it to the pot.
- Stir in fresh herbs before serving. Enjoy warm.
Notes
For a creamier texture, stir in a splash of heavy cream or coconut milk just before serving. Adjust seasoning according to taste.
