A fun and tasty dish that combines the best flavors of Mexican food and pizza, perfect for family dinners and parties.
Ingredients
- 1 lb lean ground beef (or turkey/plant-based)
- 1 packet (1 oz) taco seasoning (or 2 Tbsp homemade)
- ½ cup water
- 6 medium flour tortillas (lightly toasted)
- 1 can (16 oz) refried beans (heated)
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato (diced)
- 1 green onion (diced)
- 1 small can sliced black olives
- Sour cream
- Guacamole
- Shredded lettuce
- Diced avocado
- Hot sauce
- Crushed tortilla chips
Instructions
- Cook the ground beef in a skillet over medium heat until browned, then drain the excess fat.
- Add the taco seasoning and water to the meat and let it simmer for about 5 minutes.
- While the meat cooks, warm the refried beans and lightly toast the tortillas in a skillet or oven for 3 to 5 minutes until they are warm and slightly crispy.
- Lay 3 tortillas on a baking sheet. Spread each one with refried beans, then top with the seasoned beef mixture.
- Place one more tortilla on top of each stack.
- Spoon red enchilada sauce over each stack. Sprinkle with cheddar and pepper-jack cheeses. Then add the diced tomatoes, green onions, and sliced black olives.
- Bake in a preheated oven at 400°F for 10 to 12 minutes, or until the cheese is melted and bubbling.
- Allow the pizzas to rest for 2 to 3 minutes, then slice them into wedges and serve warm. Add any additional toppings like sour cream, guacamole, or hot sauce as desired.
Notes
For a healthier option, use lean ground turkey or plant-based meat. Customizable with different proteins and cheese types.
