Description

A fun and tasty dish that combines the best flavors of Mexican food and pizza, perfect for family dinners and parties.


Ingredients

  • 1 lb lean ground beef (or turkey/plant-based)
  • 1 packet (1 oz) taco seasoning (or 2 Tbsp homemade)
  • ½ cup water
  • 6 medium flour tortillas (lightly toasted)
  • 1 can (16 oz) refried beans (heated)
  • 1 can (10 oz) red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato (diced)
  • 1 green onion (diced)
  • 1 small can sliced black olives
  • Sour cream
  • Guacamole
  • Shredded lettuce
  • Diced avocado
  • Hot sauce
  • Crushed tortilla chips


Instructions

  1. Cook the ground beef in a skillet over medium heat until browned, then drain the excess fat.
  2. Add the taco seasoning and water to the meat and let it simmer for about 5 minutes.
  3. While the meat cooks, warm the refried beans and lightly toast the tortillas in a skillet or oven for 3 to 5 minutes until they are warm and slightly crispy.
  4. Lay 3 tortillas on a baking sheet. Spread each one with refried beans, then top with the seasoned beef mixture.
  5. Place one more tortilla on top of each stack.
  6. Spoon red enchilada sauce over each stack. Sprinkle with cheddar and pepper-jack cheeses. Then add the diced tomatoes, green onions, and sliced black olives.
  7. Bake in a preheated oven at 400°F for 10 to 12 minutes, or until the cheese is melted and bubbling.
  8. Allow the pizzas to rest for 2 to 3 minutes, then slice them into wedges and serve warm. Add any additional toppings like sour cream, guacamole, or hot sauce as desired.

Notes

For a healthier option, use lean ground turkey or plant-based meat. Customizable with different proteins and cheese types.
