Ingredients
- 1 lb lean ground beef
- 2 medium zucchinis, sliced
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked rice (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the ground beef and cook until browned, breaking it apart with a spatula.
- Stir in the bell pepper and zucchini; cook for another 5-7 minutes until the vegetables are tender.
- Add soy sauce, salt, and pepper to taste; stir to combine.
- Serve over cooked rice or enjoy on its own.
