Description

Nutritious oatmeal cookies made with oats, carrots, and nuts, providing essential vitamins and fiber.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup raisins or nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine rolled oats, grated carrots, almond flour, honey (or maple syrup), applesauce, baking powder, cinnamon, nutmeg, and salt. Mix well until all ingredients are combined.
  3. If using, fold in raisins or nuts.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart.
  5. Bake for about 12-15 minutes, or until the edges are lightly golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, consider adding dark chocolate chips or coconut flakes. Ensure finely grated carrots for better texture.
