Ingredients
- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup raisins or nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine rolled oats, grated carrots, almond flour, honey (or maple syrup), applesauce, baking powder, cinnamon, nutmeg, and salt. Mix well until all ingredients are combined.
- If using, fold in raisins or nuts.
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them apart.
- Bake for about 12-15 minutes, or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a richer flavor, consider adding dark chocolate chips or coconut flakes. Ensure finely grated carrots for better texture.
