Description

Delicious and comforting ground beef enchiladas, perfect for family dinners and gatherings.


Ingredients

  • 1 pound ground beef
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 can (15 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Cilantro for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
  3. Stir in chili powder, cumin, salt, and pepper.
  4. In a separate pot, combine the tomato sauce and diced tomatoes, heating until warmed through.
  5. To assemble, place a few spoonfuls of the beef mixture in each tortilla, sprinkle with cheese, and roll up.
  6. Arrange the rolled tortillas in a baking dish, seam side down.
  7. Pour the tomato sauce mixture over the enchiladas and top with remaining cheese.
  8. Bake for about 20-25 minutes, until cheese is melted and bubbly.
  9. Garnish with cilantro if desired and serve hot.
