Delicious and comforting ground beef enchiladas, perfect for family dinners and gatherings.
Ingredients
- 1 pound ground beef
- 8 corn tortillas
- 2 cups shredded cheese
- 1 can (15 oz) tomato sauce
- 1 can (10 oz) diced tomatoes with green chilies
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned.
- Stir in chili powder, cumin, salt, and pepper.
- In a separate pot, combine the tomato sauce and diced tomatoes, heating until warmed through.
- To assemble, place a few spoonfuls of the beef mixture in each tortilla, sprinkle with cheese, and roll up.
- Arrange the rolled tortillas in a baking dish, seam side down.
- Pour the tomato sauce mixture over the enchiladas and top with remaining cheese.
- Bake for about 20-25 minutes, until cheese is melted and bubbly.
- Garnish with cilantro if desired and serve hot.
