Description

A simple and tasty meal that combines all the delicious flavors of a burrito in one bowl, perfect for lunch or dinner.


Ingredients

  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add cumin, chili powder, salt, and pepper to the beef and mix well.
  3. In serving bowls, layer cooked rice, the seasoned ground beef, black beans, corn, salsa, and cheese.
  4. Top each bowl with diced avocado and a dollop of sour cream.
  5. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the beef and rice mixture separately and reheat before serving.
