Description
A simple and tasty meal that combines all the delicious flavors of a burrito in one bowl, perfect for lunch or dinner.
Ingredients
- 1 lb ground beef
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheese
- 1 avocado, diced
- 1/2 cup sour cream
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add cumin, chili powder, salt, and pepper to the beef and mix well.
- In serving bowls, layer cooked rice, the seasoned ground beef, black beans, corn, salsa, and cheese.
- Top each bowl with diced avocado and a dollop of sour cream.
- Serve immediately and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the beef and rice mixture separately and reheat before serving.
