Delightful gluten free and dairy free peanut butter cookies, perfect for those with dietary restrictions.
Ingredients
- 1 cup peanut butter (or PBfit)
- 1/2 cup honey or maple syrup
- 1/2 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Optional: chocolate chips or nuts
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Add the coconut flour, baking soda, and salt to the mixture, and stir until well combined.
- If desired, fold in chocolate chips or nuts.
- Scoop tablespoon-sized portions of the dough onto a baking sheet lined with parchment paper, spacing them apart.
- Flatten each cookie slightly with a fork.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Make sure to measure the coconut flour properly. For a softer cookie, do not overbake them.
