Description

A warm, comforting German Potato Soup that is hearty, flavorful, and easy to make, perfect for chilly days.


Ingredients

  • 4 large potatoes, peeled and diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup dairy-free cream
  • Salt and pepper to taste
  • Fresh herbs (thyme, parsley) for garnish


Instructions

  1. In a large pot, sauté the onion, carrots, and celery until soft.
  2. Add in the diced potatoes and vegetable broth, and bring to a boil.
  3. Reduce heat and let it simmer until the potatoes are soft, about 15-20 minutes.
  4. Blend the soup until creamy, then stir in the dairy-free cream.
  5. Season with salt and pepper to taste.

Notes
