A warm, comforting German Potato Soup that is hearty, flavorful, and easy to make, perfect for chilly days.
Ingredients
- 4 large potatoes, peeled and diced
- 2 carrots, diced
- 2 stalks of celery, diced
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup dairy-free cream
- Salt and pepper to taste
- Fresh herbs (thyme, parsley) for garnish
Instructions
- In a large pot, sauté the onion, carrots, and celery until soft.
- Add in the diced potatoes and vegetable broth, and bring to a boil.
- Reduce heat and let it simmer until the potatoes are soft, about 15-20 minutes.
- Blend the soup until creamy, then stir in the dairy-free cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs.
Notes
For extra flavor, try adding garlic when sautéing the vegetables. If you prefer a thicker soup, blend more of the potatoes instead of just pureeing them all.
