Description
A wholesome and healthy vegetable soup perfect for a cozy dinner or quick lunch.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add the garlic and cook for an additional minute.
- Pour in the vegetable broth and bring to a boil.
- Stir in the diced tomatoes, zucchini, green beans, thyme, basil, salt, and pepper.
- Reduce heat and let simmer for 20-25 minutes or until the vegetables are tender.
- Taste and adjust seasonings as necessary.
- Serve hot, garnished with fresh parsley.
Notes
Great served with crusty bread or a side salad. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
