Ingredients
- 2 boneless, skinless chicken breasts
- 4 cups chicken broth
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 cup spinach or kale
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken breasts, chicken broth, carrots, celery, onion, and garlic.
- Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it into bite-sized pieces.
- Return shredded chicken to the pot, add green beans, spinach or kale, thyme, oregano, salt, and pepper.
- Simmer for an additional 10 minutes.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, consider adding a splash of lemon juice before serving. You can swap out vegetables based on what you have on hand.
