Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 cup spinach or kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, combine the chicken breasts, chicken broth, carrots, celery, onion, and garlic.
  2. Bring to a boil, then reduce heat and let simmer for 15-20 minutes, or until chicken is cooked through.
  3. Remove chicken from the pot and shred it into bite-sized pieces.
  4. Return shredded chicken to the pot, add green beans, spinach or kale, thyme, oregano, salt, and pepper.
  5. Simmer for an additional 10 minutes.
  6. Garnish with fresh parsley before serving.
