A quick and nutritious meal that combines pasta and fresh broccoli with a light garlic olive oil sauce, perfect for busy weeknights.
Ingredients
- 8 oz pasta of your choice
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions until al dente.
- In the last 2 minutes of cooking, add the broccoli florets to the pasta pot.
- Drain the pasta and broccoli, and return them to the pot.
- In a separate pan, heat olive oil over medium heat and add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant.
- Pour the garlic oil over the pasta and broccoli, tossing well to combine.
- Season with salt and pepper to taste.
- Serve with grated Parmesan cheese, if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop with a splash of water or olive oil.
