Description
A hearty and filling stew made with ground beef and plenty of vegetables, perfect for busy weeknights or cozy dinners.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, diced
- 2 potatoes, diced
- 3 cups beef broth
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add onions and garlic, cooking until softened.
- Stir in carrots and potatoes, followed by the beef broth and diced tomatoes.
- Season with salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat, cover, and let simmer for about 30 minutes or until vegetables are tender.
- Remove bay leaf before serving.
Notes
Serve hot with warm bread or rice, and top with fresh parsley for extra flavor. Can be stored in the refrigerator for up to 3 days or frozen for 3 months.
