Description

A hearty and filling stew made with ground beef and plenty of vegetables, perfect for busy weeknights or cozy dinners.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 3 cups beef broth
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried thyme
  • 1 bay leaf


Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add onions and garlic, cooking until softened.
  3. Stir in carrots and potatoes, followed by the beef broth and diced tomatoes.
  4. Season with salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat, cover, and let simmer for about 30 minutes or until vegetables are tender.
  6. Remove bay leaf before serving.

Notes

Serve hot with warm bread or rice, and top with fresh parsley for extra flavor. Can be stored in the refrigerator for up to 3 days or frozen for 3 months.
