Description

A comforting dish featuring caramelized onions, melted cheese, and toasted baguette, perfect as a starter or main course.


Ingredients

  • 4 large onions, thinly sliced
  • 1/2 cup unsalted butter
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme
  • 1/2 cup dry white wine (optional)
  • 8 cups beef broth
  • 1 baguette, sliced
  • 2 cups shredded Gruyère cheese
  • Salt and pepper to taste


Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions, sugar, and salt, and sauté until the onions are caramelized, about 30 minutes. Stir in the thyme.
  3. If using white wine, add it now and cook for an additional 5 minutes.
  4. Pour in the beef broth and bring to a simmer. Cook for another 20 minutes, seasoning with salt and pepper to taste.
  5. Preheat the oven to 350°F (175°C).
  6. Place the sliced baguette on a baking sheet and toast until golden.
  7. Ladle the soup into bowls, place a slice of toasted baguette on top, and sprinkle with Gruyère cheese.
  8. Place the bowls on a baking sheet and bake in the oven until the cheese is bubbly and golden, about 10 minutes.
  9. Serve hot and enjoy!

Notes

Make sure to slice the onions thinly for even cooking. For a vegetarian version, use vegetable broth instead of beef broth.
