A comforting dish featuring caramelized onions, melted cheese, and toasted baguette, perfect as a starter or main course.
Ingredients
- 4 large onions, thinly sliced
- 1/2 cup unsalted butter
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon dried thyme
- 1/2 cup dry white wine (optional)
- 8 cups beef broth
- 1 baguette, sliced
- 2 cups shredded Gruyère cheese
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the sliced onions, sugar, and salt, and sauté until the onions are caramelized, about 30 minutes. Stir in the thyme.
- If using white wine, add it now and cook for an additional 5 minutes.
- Pour in the beef broth and bring to a simmer. Cook for another 20 minutes, seasoning with salt and pepper to taste.
- Preheat the oven to 350°F (175°C).
- Place the sliced baguette on a baking sheet and toast until golden.
- Ladle the soup into bowls, place a slice of toasted baguette on top, and sprinkle with Gruyère cheese.
- Place the bowls on a baking sheet and bake in the oven until the cheese is bubbly and golden, about 10 minutes.
- Serve hot and enjoy!
Notes
Make sure to slice the onions thinly for even cooking. For a vegetarian version, use vegetable broth instead of beef broth.
