A delicious and satisfying meal combining chicken, bacon, and ranch dressing, perfect for any quick meal.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 2 tbsp butter (for cooking)


Instructions

  1. In a bowl, mix the shredded chicken with the ranch dressing.
  2. Add in the crumbled bacon, diced tomatoes, chopped onion, and cilantro. Stir to combine all the ingredients well.
  3. Take one tortilla and layer it with some shredded cheese, followed by a generous amount of the chicken mixture, and then top with more cheese.
  4. Fold the tortilla in half to create a half-moon shape.
  5. Heat a skillet over medium heat and melt the butter.
  6. Cook the quesadilla for 2-3 minutes on one side until it is golden brown, then flip it over and cook the other side for another 2-3 minutes.
  7. Repeat with the remaining tortillas and filling.

Notes

Ensure that the bacon is crispy for the best texture. Feel free to mix in other veggies like bell peppers or spinach.
