A delicious and satisfying meal combining chicken, bacon, and ranch dressing, perfect for any quick meal.
Ingredients
- 4 large flour tortillas
- 2 cups cooked chicken (shredded)
- 8 slices bacon (cooked and crumbled)
- 2 cups Mexican cheese blend (shredded)
- 1/2 cup ranch dressing
- 1 cup tomatoes (diced)
- 1/4 cup red onion (finely chopped)
- 2 tbsp fresh cilantro (chopped)
- 2 tbsp butter (for cooking)
Instructions
- In a bowl, mix the shredded chicken with the ranch dressing.
- Add in the crumbled bacon, diced tomatoes, chopped onion, and cilantro. Stir to combine all the ingredients well.
- Take one tortilla and layer it with some shredded cheese, followed by a generous amount of the chicken mixture, and then top with more cheese.
- Fold the tortilla in half to create a half-moon shape.
- Heat a skillet over medium heat and melt the butter.
- Cook the quesadilla for 2-3 minutes on one side until it is golden brown, then flip it over and cook the other side for another 2-3 minutes.
- Repeat with the remaining tortillas and filling.
Notes
Ensure that the bacon is crispy for the best texture. Feel free to mix in other veggies like bell peppers or spinach.
