Description

Crispy Smashed Carrots are a delightful side dish featuring crispy edges and tender middles, complemented by savory Parmesan cheese.


Ingredients

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a pot of salted water, boil the carrot rounds for 10–12 minutes, or until they are fork-tender. Drain them and let them cool.
  3. Place the carrots on the baking sheet. Using the bottom of a glass or measuring cup, gently press down on each round to flatten them slightly.
  4. Drizzle the olive oil over the smashed carrots. Season with garlic powder, smoked paprika, salt, and pepper. Sprinkle the grated Parmesan on top.
  5. Roast the carrots in the oven for 20–25 minutes, flipping them halfway through, until the edges are golden and crispy.
  6. Garnish with chopped parsley and serve while hot.

Ensure carrot rounds are evenly cut for uniform cooking. You can adjust seasonings based on your preference.
