Description
Crispy Smashed Carrots are a delightful side dish featuring crispy edges and tender middles, complemented by savory Parmesan cheese.
Ingredients
- 1 lb carrots, peeled and cut into thick rounds
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a pot of salted water, boil the carrot rounds for 10–12 minutes, or until they are fork-tender. Drain them and let them cool.
- Place the carrots on the baking sheet. Using the bottom of a glass or measuring cup, gently press down on each round to flatten them slightly.
- Drizzle the olive oil over the smashed carrots. Season with garlic powder, smoked paprika, salt, and pepper. Sprinkle the grated Parmesan on top.
- Roast the carrots in the oven for 20–25 minutes, flipping them halfway through, until the edges are golden and crispy.
- Garnish with chopped parsley and serve while hot.
Notes
Ensure carrot rounds are evenly cut for uniform cooking. You can adjust seasonings based on your preference.
