Enjoy these fun and tasty crispy ground beef tacos filled with seasoned beef and melted cheese, perfect for a weeknight dinner or gathering.
Ingredients
- 1 pound lean ground beef (90%)
- 1 packet of taco seasoning
- 3/4 cup red enchilada sauce
- 2 1/2 cups Oaxaca cheese or Mexican cheese or Monterey Jack
- 10 corn tortillas
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 450°F (232°C).
- Heat a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up as it cooks.
- Stir in the taco seasoning and red enchilada sauce. Bring to a simmer, then remove from heat.
- Wrap the corn tortillas in a damp paper towel and microwave for 30-60 seconds until pliable.
- Brush one side of each tortilla with olive oil and place the oiled side down on a baking sheet.
- Add 2 tablespoons of cheese to one half of the tortilla, then top with 1/4 cup beef mixture and another 2 tablespoons of cheese. Fold the tortilla over the filling.
- Repeat with remaining tortillas, arranging them in a single layer on the baking sheet.
- Bake for 16 minutes or until the tortillas are crispy and cheese has melted. Let cool for 3 minutes before serving.
Notes
Serve with toppings like lettuce, tomatoes, sour cream, and salsa. Leftovers can be stored in an airtight container for 2-3 days.
