Description

A delicious and comforting dish combining tender chicken, creamy garlic sauce, and whole wheat pasta.


Ingredients

  • 8 oz whole wheat pasta
  • 1 lb lean chicken breast, diced
  • 1 cup Greek yogurt
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 cups spinach
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the whole wheat pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in the Greek yogurt and Parmesan cheese, mixing well until creamy.
  5. Add cooked pasta and spinach, tossing to combine until spinach wilts.
  6. Serve warm, garnished with extra Parmesan if desired.
