A delicious and comforting dish combining tender chicken, creamy garlic sauce, and whole wheat pasta.
Ingredients
- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 cups spinach
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the whole wheat pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced chicken breast, season with salt and pepper, and cook until browned and cooked through.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the Greek yogurt and Parmesan cheese, mixing well until creamy.
- Add cooked pasta and spinach, tossing to combine until spinach wilts.
- Serve warm, garnished with extra Parmesan if desired.
Notes
Add extra Parmesan cheese or freshly cracked black pepper for garnish.
