Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (e.g., green beans, peas, corn)
  • 1 cup heavy cream or coconut milk
  • Salt and pepper to taste
  • 1 tablespoon fresh herbs (e.g., thyme, parsley)
  • Bread for serving


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
  2. Stir in garlic and cook for another minute.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add mixed vegetables and simmer until tender.
  5. Lower heat and stir in the cream, seasoning with salt, pepper, and herbs.
  6. Serve warm with bread.

Notes

For a vegan version, use coconut milk instead of heavy cream. You can also blend part of the soup for a thicker consistency.
