A warm and creamy soup packed with nutrients from various vegetables, perfect for chilly days.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups mixed vegetables (e.g., green beans, peas, corn)
- 1 cup heavy cream or coconut milk
- Salt and pepper to taste
- 1 tablespoon fresh herbs (e.g., thyme, parsley)
- Bread for serving
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté until softened.
- Stir in garlic and cook for another minute.
- Pour in the vegetable broth and bring to a boil.
- Add mixed vegetables and simmer until tender.
- Lower heat and stir in the cream, seasoning with salt, pepper, and herbs.
- Serve warm with bread.
Notes
For a vegan version, use coconut milk instead of heavy cream. You can also blend part of the soup for a thicker consistency.
