Description

A delicious and nutritious snack combining apples, cinnamon, and cottage cheese, perfect for any time of the day.


Ingredients

  • 1 cup (240g) cottage cheese, preferably small curds and whole milk
  • 1 cup (90g) rolled oats
  • 1/2 cup (120ml) applesauce or small grated apple
  • 1 large egg
  • 1/2 tsp (1.5g) ground cinnamon
  • 1 tbsp (21g) honey or maple syrup (optional)
  • 1/2 tsp (2g) baking powder
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Stir until smooth.
  3. Allow the batter to sit for 5 minutes.
  4. Spoon the batter into the mini muffin pan, filling nearly to the top.
  5. Bake for 18 to 20 minutes until lightly golden. Check with a toothpick.
  6. Remove from oven and cool in the pan for a few minutes, then transfer to a wire rack.

Notes

These bites can be served warm or at room temperature. Top with apple slices, honey, or extra cinnamon if desired.
