Description
A delicious and nutritious snack combining apples, cinnamon, and cottage cheese, perfect for any time of the day.
Ingredients
- 1 cup (240g) cottage cheese, preferably small curds and whole milk
- 1 cup (90g) rolled oats
- 1/2 cup (120ml) applesauce or small grated apple
- 1 large egg
- 1/2 tsp (1.5g) ground cinnamon
- 1 tbsp (21g) honey or maple syrup (optional)
- 1/2 tsp (2g) baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup, baking powder, and salt. Stir until smooth.
- Allow the batter to sit for 5 minutes.
- Spoon the batter into the mini muffin pan, filling nearly to the top.
- Bake for 18 to 20 minutes until lightly golden. Check with a toothpick.
- Remove from oven and cool in the pan for a few minutes, then transfer to a wire rack.
Notes
These bites can be served warm or at room temperature. Top with apple slices, honey, or extra cinnamon if desired.
