Delightful clusters made with strawberries, Greek yogurt, and chocolate, perfect for a healthy dessert or snack.
Ingredients
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Add the chopped strawberries, Greek yogurt, honey, and vanilla extract to a large bowl, and combine thoroughly.
- Use a spoon to add scoops of the yogurt mixture (about 2 tbsp each) onto a parchment paper-lined baking sheet to form clusters, making around 10 clusters.
- Place the baking sheet in the freezer and freeze until completely frozen, about 1-2 hours.
- Melt the chocolate by combining chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 15 to 30-second intervals, stirring until fully melted.
- Carefully remove frozen clusters from the freezer and dip each into melted chocolate using a spoon, ensuring they are thoroughly coated. Place back on the prepared baking sheet.
- Optionally, sprinkle a little sea salt on top and return clusters to the freezer for a few minutes to let the chocolate harden and yogurt set.
Notes
Store in an airtight container in the freezer for up to a month. Best enjoyed fresh for optimal taste.
