Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup black beans (optional)
- 1/2 cup onions, diced
- 1/2 cup bell peppers, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 large flour tortillas
- Oil for frying
- Salsa, sour cream, and guacamole for serving
Instructions
- In a large bowl, combine the shredded chicken, cheese, black beans, onions, bell peppers, cumin, and chili powder.
- Warm the tortillas in a skillet to make them pliable.
- Place a generous portion of the filling mixture on each tortilla, then fold in the sides and roll up tightly.
- Heat oil in a deep fryer or large pan over medium-high heat.
- Fry each chimichanga until golden brown and crispy on all sides, about 3-4 minutes per side.
- Drain on paper towels.
- Serve hot with salsa, sour cream, and guacamole.
Notes
Use leftover rotisserie chicken for a quick option. Customize with different fillings like corn or jalapeños.
