Delicious and crispy quesadillas filled with flavorful ground beef and gooey cheese, perfect for busy weeknights or gatherings.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup tomato sauce or salsa
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 6 large flour tortillas
- Butter or oil for frying
- Sour cream, salsa, or guacamole for serving (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, draining excess fat.
- Add the chopped onion and cook for about 3 minutes. Then, add minced garlic and cook for an additional minute.
- Stir in chili powder, ground cumin, paprika, salt, pepper, and tomato sauce, allowing to simmer for 3-4 minutes.
- Place tortillas on a work surface. Sprinkle a layer of cheddar and Monterey Jack cheese on one half of each tortilla. Spoon beef mixture over cheese and top with more cheese. Fold to seal.
- In a clean skillet, heat butter or oil over medium heat. Cook each quesadilla for 2-3 minutes on each side until golden brown and cheese is melted.
- Let cool slightly, slice into wedges, and serve with sour cream, salsa, or guacamole if desired.
Notes
Add chopped jalapeños or bell peppers for extra flavor. Use different cheeses for variety. Store leftovers in an airtight container in the fridge for up to 3 days.
