Description

A delicious and easy dish that combines comforting flavors of cheese, beef, and enchiladas with fun tortellini, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1 (10 oz) can red enchilada sauce
  • ½ cup cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)


Instructions

  1. In a large skillet over medium heat, sauté the diced onion until translucent, about 3–4 minutes. Add the minced garlic and cook for another 30 seconds.
  2. Add the ground beef, seasoning with salt, pepper, chili powder, and cumin. Cook until browned, and drain excess fat.
  3. Pour in the red enchilada sauce and bring to a simmer.
  4. Add cream cheese in chunks and stir until fully melted and combined.
  5. Fold in cheese tortellini and cook on medium-low heat for 5–7 minutes until tender and heated through.
  6. Sprinkle mozzarella cheese on top, cover the skillet, and cook for 2–3 minutes, or broil until bubbly and golden.
  7. Garnish with fresh cilantro if desired and serve hot.

Notes

For added spice, include diced jalapeños or hot sauce. Substitute ground turkey or chicken for a leaner option. Add spinach or bell peppers for more greens.
