Ingredients
- 4 large tomatoes, chopped
- 1 large carrot, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh basil for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the chopped tomatoes and carrot, then cook for about 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let simmer for 20 minutes until the carrots are tender.
- Use an immersion blender to blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil if desired.
Notes
For a richer flavor, consider roasting the tomatoes and carrots beforehand or adding a pinch of sugar if the tomatoes taste too acidic.
