Description

A delightful and comforting soup that combines fresh flavors of ripe tomatoes and sweet carrots, perfect for any time of year.


Ingredients

  • 4 large tomatoes, chopped
  • 1 large carrot, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the chopped tomatoes and carrot, then cook for about 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and let simmer for 20 minutes until the carrots are tender.
  6. Use an immersion blender to blend the soup until smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil if desired.

Notes

For a richer flavor, consider roasting the tomatoes and carrots beforehand or adding a pinch of sugar if the tomatoes taste too acidic.
