Description

A delightful and healthy dessert made with creamy coconut milk and bursting with the sweetness of blueberries, perfect for meal prep.


Ingredients

  • 1 can lite coconut milk (13.5oz)
  • 1/4 cup water
  • 1 tsp vanilla extract
  • 6 tbsp chia seeds
  • 1 1/2 cup frozen blueberries
  • 2 tbsp water


Instructions

  1. In a large mixing bowl, add the coconut milk, vanilla extract, 1/4 cup of water, and chia seeds. Mix everything together thoroughly.
  2. Place the bowl in the refrigerator to chill for at least 6 hours, preferably overnight.
  3. To prepare the blueberry sauce, add the frozen blueberries and 2 tablespoons of water to a saucepan and set the heat to medium.
  4. After about 3-5 minutes, the blueberries will start to burst. Smash them down with the back of a spoon or a potato masher.
  5. Once all the blueberries are mashed, reduce the heat to medium-low and let it simmer for 10 minutes, stirring frequently.
  6. Remove the saucepan from the stove and let it cool completely.
  7. Store the chia seed pudding and blueberry sauce in half-pint jars in the refrigerator.

Notes

For a thicker pudding, increase the amount of chia seeds. You can sweeten with honey or maple syrup for a sweeter taste.
