Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cups red enchilada sauce
- 8 corn tortillas, cut into strips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef and onion over medium heat until the beef is browned; drain excess fat.
- Stir in the enchilada sauce, black beans, and corn; let simmer for 5 minutes.
- In a 9×13 inch baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
- Garnish with chopped cilantro before serving.
Notes
Serve hot with a side of sour cream or avocado. Pairs well with a fresh salad or Mexican rice.
