Description

A delightful dish combining rich flavors of beef, cheese, and spices into a comforting meal perfect for family dinners.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups red enchilada sauce
  • 8 corn tortillas, cut into strips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef and onion over medium heat until the beef is browned; drain excess fat.
  3. Stir in the enchilada sauce, black beans, and corn; let simmer for 5 minutes.
  4. In a 9×13 inch baking dish, layer half of the tortilla strips, half of the beef mixture, and half of the cheese. Repeat the layers with the remaining ingredients.
  5. Cover the dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  7. Garnish with chopped cilantro before serving.

Notes

Serve hot with a side of sour cream or avocado. Pairs well with a fresh salad or Mexican rice.
