Description

Delicious and healthy muffins made with ripe bananas and whole grain oats. Perfect for breakfast or a snack.


Ingredients

  • 2 ripe bananas
  • 1 cup whole grain oats
  • 1/2 cup milk (or a milk alternative)
  • 1/4 cup maple syrup (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chocolate chips or blueberries (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or spray with cooking spray.
  2. In a large bowl, mash the ripe bananas.
  3. Add the oats, milk, maple syrup, baking powder, baking soda, salt, and cinnamon. Mix until well combined.
  4. If you’re using add-ins, fold them in gently.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before enjoying!

Notes

Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
