Ingredients
- 1 lb Sausage
- 12 oz Three-cheese tortellini
- 2 Sweet potatoes, diced
- 4 cups Spinach
- 3 cloves Garlic, minced
- 1 cup Cream
- 4 cups Broth
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, brown the sausage over medium heat.
- Add minced garlic and diced sweet potatoes, sautéing until softened.
- Pour in the broth and bring to a boil.
- Add tortellini and cook according to package instructions.
- Stir in the spinach and cream, cooking until the spinach wilts.
- Season with salt and pepper to taste. Serve hot.
Notes
For added flavor, use Italian sausage instead of regular sausage. You can use frozen spinach if fresh is not available; just add it a little later in the cooking process.
