A comforting soup that combines savory sausage, hearty tortellini, and fresh spinach, perfect for chilly fall days.


Ingredients

  • 1 lb Sausage
  • 12 oz Three-cheese tortellini
  • 2 Sweet potatoes, diced
  • 4 cups Spinach
  • 3 cloves Garlic, minced
  • 1 cup Cream
  • 4 cups Broth
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. In a large pot, brown the sausage over medium heat.
  2. Add minced garlic and diced sweet potatoes, sautéing until softened.
  3. Pour in the broth and bring to a boil.
  4. Add tortellini and cook according to package instructions.
  5. Stir in the spinach and cream, cooking until the spinach wilts.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For added flavor, use Italian sausage instead of regular sausage. You can use frozen spinach if fresh is not available; just add it a little later in the cooking process.
